A long, sword-shaped lettuce with crisp stems and tender leaves, famous stir-fried with tinned dace in black bean. In Australia it is an Asian-grocer and market vegetable only, tagged Chinese lettuce or, in the Taiwanese way, A-choy.
Preparation
Wash, cut into lengths, stir-fry fast over high heat.
Origin
Southern China. Asian grocers and markets year round, best in the cool months; not a supermarket line. Cos hearts, stem end on, stand in.
