Chilli oil
辣椒油
Red oil made by cooking chilli, garlic and shallot slowly in oil: more fragrant than fiery. A teaspoon goes on blanched greens, poached chicken, dumplings and clams. Many Hong Kong homes keep a bottle, such as Lee Kum Kee Chiu Chow Chilli Oil.

Chaozhou, Guangdong. At Woolworths, Lee Kum Kee 205g for example; also at Asian grocers.
