Cuttlefish

Cuttlefish has thick, firm flesh around a white cuttlebone and an ink sac, unlike squid, which is thinner and has only a soft, clear quill. Cuttlefish paste needs cuttlefish, with all the skin and membrane peeled off. Fresh at Australian fish markets, frozen at Chinese grocers.

- Keep raw cuttlefish in the fridge and away from other food; the ink stains hands and boards.
Preparation
Pull out the head and tentacles, remove the ink sac and cuttlebone, and peel off the skin and the membranes inside and out.
