The Hong Kong eggplant is long, slim and pale purple, thin-skinned and nearly seedless, and it collapses to silk in the claypot. Asian grocers and markets sell it as long Asian eggplant; the Lebanese eggplant on every supermarket shelf is shorter and darker and cooks the same with a minute more.

Preparation

Cut into batons; soak in salted water or pass through oil so it does not blacken.
