Plain flour for the paste that seals a spring roll and for a frying batter; it is plain flour on an Australian shelf (about 10 to 11% protein). The bakery volume needs three: bread flour (高筋, Lighthouse Bread & Pizza, 11.5%, for example) for pineapple and cocktail-bun dough; cake flour (低筋, Lighthouse Cake, Biscuit & Pastry, 8.7%, for example) for 紙包蛋糕 and 馬拉糕, or plain flour with two tablespoons per cup swapped for cornflour; plain for egg-tart pastry and the pineapple-bun topping. Never self-raising, which has the raising agent already in. Contains gluten.
