The Hong Kong pork chop is a bone-in loin chop cut thin, about a centimetre, bashed with the back of the cleaver and marinated with starch before frying: onion pork chops and baked pork chop rice start here. Supermarket loin chops are cut two centimetres thick; ask a butcher for thin ones, or use scotch fillet steaks, which forgive a hot pan.
Cautions: read first
- Cook pork and chicken right through: no pink at the centre and the juices run clear.
Preparation
Bash, then marinate half an hour with starch, soy and sugar.
