Sesame oil
芝麻油
The pale, toasted sesame oil that finishes a stir-fry, seasons a marinade and is drizzled over steamed fish: fragrant, never bitter, from the supermarket (Lee Kum Kee, for example) or a Taiwanese brand. It is not the black sesame oil of confinement cooking, which is dark, heavy and used to fry the ginger at the start.
Cautions: read first
- Contains sesame, a mandatory-declaration allergen in Australia.
- Turns bitter at high heat; add it at the end.
Preparation
A few drops after the heat is off.
Origin
The sesame-growing north of China; Hong Kong and Taiwan press their own. At Woolworths, Lee Kum Kee 207ml for example; larger bottles at Asian grocers.
