Whiting

沙鑽

A small, sweet sea fish: two or three on a plate, steamed or pan-fried and splashed with soy. Every Australian fishmonger and supermarket counter has it, cheaply. Without dace for fish cakes, whiting or flathead fillets minced and beaten make the fish paste.

Cautions: read first

  • Fish is a mandatory-declaration allergen in Australia; steam until the flesh lifts from the bone and the bone is white, not pink.

Preparation

Pat dry, dust with starch, fry in a hot wok.

Origin
