Hong Kong wontons want the thin, yellow, egg-and-alkali wrappers sold in stacks in the Asian grocer fridge. The thick white ones are Shanghai wrappers and make a different dumpling. Cover what you are not using with a damp cloth, or wrap the lot and freeze them.
