An amber wine brewed from glutinous rice, sweeter and rounder than plain rice wine. It is the wine Hakka families cook chicken in after a birth, brewed at home by the jar and used all month.

Traditional food therapy

The tradition holds that yellow wine warms the body and moves qi. Said plainly: the alcohol does not cook away, and if you are breastfeeding it has to be counted.

Cautions: read first

  • Contains alcohol. While breastfeeding, the Australian NHMRC position is that not drinking is safest.
  • The alcohol does not boil off; residue remains however long it is cooked.

Preparation

Splashed into a hot wok, or used as the braising liquid on its own.
