Ingredients

百子櫃Cordyceps flower (cultivated)40 g (1 tael)
百子櫃Red jujube date6
街市Old hen (stewing chicken)· a dressed bird; or 8 chicken feet plus 300 g lean pork1
街市Fresh ginger2 slices

Method

  1. Rinse the 蟲草花, goji berries and red dates, and pit the red dates.
  2. Skin the dressed chicken and chop it into pieces, then blanch it (汆水, a quick boil to clear the scum) and set aside.
  3. Put everything in the pot with 2.5 litres of water and bring to the boil over high heat.
  4. Turn down to low heat and simmer for 1.5 to 2 hours, then season with salt.
