Sodium bicarbonate; it needs an acid (brown sugar, egg, buttermilk) to release gas, and too much leaves a soapy taste. An eighth of a teaspoon in pineapple-bun topping stands in for the bakery's ammonia and cracks the crust; a pinch darkens 馬拉糕; a pinch in a café beef or pork-chop marinade is what tenderises the meat, and whether it belongs at home is a family argument. Bi-carb soda from the supermarket baking aisle lasts for years.
Preparation
Measure it by the fraction of a teaspoon; a pinch is enough for a marinade.
