Button mushrooms
The white, round Western mushroom: in the café's cream of mushroom soup, the white-sauce seafood bake, baked Portuguese chicken rice and the gravies of the sizzling-plate dinners, with tinned sliced mushrooms as the shop's shortcut. Australian supermarkets and greengrocers have them fresh all year, button (small), cup (medium) and flat (fully open), and loose by weight is cheaper than the punnet. Keep them in a paper bag in the fridge, never sealed in plastic.
Preparation
Wipe clean with a damp cloth rather than soaking; slice, and fry until they release their water and it cooks off.
