The aromatic tan root of Angelica sinensis, sold as whole heads or feathery cross-cut slices. Strongly fragrant, bitter-sweet and instantly recognisable, a few slices perfume an entire pot of blood-tonic soup, so it is dosed sparingly in home cooking.
