Bigger than a hen's egg, with a thicker shell and a large, rich yolk. In a Hong Kong kitchen duck eggs are bought mostly to cure into salted eggs; century eggs are duck eggs too. Check every shell before curing and leave out any with a crack, because one cracked egg can spoil a whole jar.
