Dried slices of the fingered citron, pale yellow and wrinkled, with a scent like aged tangerine peel but lighter. It goes into calming teas and soups, and one or two slices is enough.

Traditional food therapy

In food therapy finger citron soothes the liver, regulates qi and settles the stomach; it is used when the mood is tight and the appetite has gone.

Cautions: read first

  • A qi-regulating herb; ask a registered practitioner first if you are pregnant or run dry and depleted.
  • Too much turns the pot bitter.

Preparation

Rinse and add with the rest of the ingredients.
