五香粉
Star anise, cassia, clove, Sichuan pepper and fennel ground together: fragrant, not hot. A pinch goes into master stock, the rub for roast pork belly, and the batter for sweet and sour pork; too much and it takes over.
Origin
Southern China. Woolworths and Coles carry it; larger packets at Asian grocers.
