Lemon
The star of the café drinks counter: iced and hot lemon tea, lemon 7-Up, lemon Ribena, lemon honey, five or six thin slices a glass pressed with a spoon; lemon chicken and lemon fish are dressed with fresh juice too. Australian lemons (Eureka, Lisbon) are thicker-skinned and less juicy than Hong Kong's, so choose the smallest, heaviest ones and press gently, because the pith is bitter; Meyer lemons are too sweet and floral for lemon tea. Preparation
Wash and slice thinly; roll on the bench before juicing.
