Tinned pressed pork, sliced and fried: the 餐 in 餐蛋麵, in the luncheon-meat-and-egg sandwich and in a club sandwich. The café fries the Ma Ling tin, which is softer, sweeter and pinker. Coles, Woolworths and every Asian grocer carry luncheon meat, and Coles in Chinese suburbs and Asian grocers carry Ma Ling. The Ma Ling sold in Australia is the export version made in the Netherlands, so the label looks different from the Hong Kong tin.

Cautions: read first

  • Pork; some brands bind with wheat or soy starch, both mandatory-declaration allergens in Australia, so read the tin.
  • High in sodium; once opened, refrigerate and use within two or three days.

Preparation

Slice 5 mm thick and fry in a little oil until golden on both sides.
