White loaf
The bread under every café toast: French toast, 奶油多, 奶醬多, kaya toast, the egg sandwich and the club sandwich. Hong Kong's 方包 is a white loaf baked in a square pullman tin (Garden's 生命麵包 at home), cut 2.5 to 3 cm thick for 厚多士. Australian sandwich slices are about 1 cm and toast slices about 1.5 cm (Tip Top, for example); for the café thickness buy an unsliced white block loaf from Bakers Delight or a supermarket in-store bakery and cut it at home, or buy the square loaf from a Hong Kong-style bakery (Breadtop, for example, or the independents in Chatswood, Box Hill and Sunnybank). Sourdough is wrong for everything in this volume.
