Condensed milk
Milk cooked down with sugar until thick and very sweet; a different tin from evaporated milk (花奶), which is unsweetened. It is the 奶 in 奶油多 and 奶醬多 and the whole point of 茶走, milk tea made with condensed milk instead of evaporated milk and sugar. Hong Kong uses the Longevity brand; every Australian supermarket has the 395g tin (Nestlé, for example), and the squeeze bottle is the same thing.
Cautions: read first
- Contains milk, a mandatory-declaration allergen in Australia; once opened, decant into a covered container and refrigerate.
Preparation
Use straight from the tin; two teaspoons a cup replaces the sugar and evaporated milk in 茶走.
Origin
New York (Gail Borden, 1856). At Woolworths and Coles in 395g tins, Nestlé for example.
