A tub of thick amber sugar syrup so sticky you need a hot spoon to lift it. It is what the skin glaze on roast meats is built on — not for sweetness but to colour the skin and tighten it, which is what makes it blister in the oil. Sold in tubs at Chinese grocers and on supermarket Asian shelves, and it keeps for a very long time.
Preparation
Warm the spoon in hot water to lift it, and stir it into boiling water or vinegar to dissolve.
