Red rice vinegar
大紅浙醋
A rose-red rice vinegar, sharp with a little sweetness, which Hong Kong calls 浙醋. It is the saucer that comes with steamed crab, with 炸子雞 and with 豬手薑, and it goes into the skin glaze of 炸子雞 as well. It is not 鎮江香醋, which is black and from Jiangsu; the two are not interchangeable.
Origin
Zhejiang. On the vinegar shelf at Chinese grocers, a red bottle labelled red vinegar.
