The winter mandarin. From May to August Australian supermarkets are full of Imperials, thin-skinned and easy to peel; the 新會 mandarin of Hong Kong is not sold here. Eat the fruit, wash and dry the peel, and you have home-dried peel, which counts as 陳皮 once it has kept three years.
Preparation
Wash in warm water before peeling, with a soft brush if the fruit is waxed.
Origin
Grown in Australia. Imperials at every supermarket and market from May to August.
