A packet of hard translucent discs that swell several times over in two seconds of hot oil and eat so crisply they vanish. They are what goes round the edge of the plate when 炸子雞 comes to the table. Buy the raw ones; the pre-fried packets are never as crisp.
Preparation
Get the oil properly hot, drop them in a few at a time, and lift them out the moment they puff.
