Rose liquor

A sorghum spirit distilled with rose petals and rock sugar, over fifty percent alcohol and intensely fragrant. A teaspoon in the marinade for cured sausage, soy sauce chicken or char siu gives the smell every Hong Kong kitchen recognises. The traditional bottle is the Tianjin brand, for example.

• A spirit of about 54 percent alcohol; some remains after cooking, so take care for pregnancy, breastfeeding and children.
• Sold in Australia only through licensed sellers.
