The sweet wind-dried pork sausage that tastes of winter: claypot rice with cured meats, sausage steamed over rice, cured meats with gai lan. Hong Kong brands cannot be imported at retail, so the Australian shelf carries Australian-made ones (Wing Hong, for example), and they come close.

Preparation

Slice on the bias; steam on the rice for the last ten minutes.
