Cured duck

臘鴨

The whole wind-dried duck, a quarter of which is steamed on claypot rice beside the sausage so its fat runs into the rice. The whole bird is not sold in Australia; Australian-made cured duck leg and breast (黃家園, for example) are, and one leg replaces the quarter.
