Snapper

The most common whole fish on Australia's east coast: white, clean, large-flaked. A baby snapper at 600 to 900 g is the right size to steam, and the head goes to the soup pot.

• Fish is a mandatory-declaration allergen in Australia; steam until the flesh lifts from the bone and the bone is white, not pink.

Preparation

Clean and dry, slash twice; do not overcook.

Origin

Wild in NSW and SA; also farmed. Sydney Fish Market, fishmongers and supermarket counters all year; Asian grocers have frozen whole saddletail snapper.
