Snow vegetable
Salt-pickled potherb mustard, chopped: salty, fragrant and faintly sour, a Shanghai and Ningbo pickle that the café puts under shredded pork in 雪菜肉絲 soup vermicelli, braised vermicelli and fried noodles. Every Australian Asian grocer keeps vacuum packs on the pickle shelf, Fish Well 350g, for example, or 70 to 80g sachets; supermarkets do not carry it. Rinse and squeeze it first, then fry it fragrant before the pork goes in.

- Salty, so hold back the salt once it is in; some brands are pickled with soy sauce and contain soy or wheat, mandatory-declaration allergens in Australia, so read the pack.
