Tinned dace

A tin: dace fried and packed in salted black beans and oil, a rice dish the moment it is opened. It comes in a 184 g tin and a 227 g family size, Pearl River Bridge for example. It is the fish in tinned dace with lettuce; the beans and oil in the tin are used, not poured away. On the shelf of every Asian grocer in Australia.
Cautions: read first
- Contains fish and soy; the tin has small bones, which need care with young children. Refrigerate what is left in a covered container and use within two days.
Preparation
Lift the fish out and flake it, pick out the coarse bones; keep the beans and oil separately.
