Longan, lotus seed and egg soup

Ingredients

百子櫃Dried longan flesh· also called 龍眼肉, longan flesh12 g
百子櫃Lotus seed40 g (1 tael)
街市Chicken egg (hard-boiled)· hard-boiled and shelled first2
百子櫃Red jujube date4
街市Fresh ginger2 slices

Method

  1. Rinse the lotus seeds, 圓肉 and red dates.
  2. Hard-boil the eggs, shell them and set them aside.
  3. Put everything in the pot with 1.5 litres of water and bring to the boil over high heat.
  4. Turn down to low heat and simmer for 1 to 1.5 hours, and add a little rock sugar or salt to taste.
