The round, dense Western head cabbage: half a head shredded into the café's borscht, cooked soft and sweet, is the body of that soup, and it is stir-fried or braised with glass noodles at home. Australian supermarkets tag it cabbage or green cabbage, whole or by the half; savoy (crinkled) and wombok (Chinese cabbage) are different and wrong for borscht. Not to be confused with cauliflower (椰菜花).

Core it and shred, or cut into large pieces.
