The thick-stemmed, juicy Western celery, not the thin Chinese celery (唐芹) of the soup pot and the fish stir-fry. The café's borscht takes two stalks diced and sweated with onion, carrot and cabbage for the base; celery with scallops or with beef is a rice-plate dish. Every Australian supermarket and greengrocer has it all year, whole or by the half; strip the strings from the outer stalks.

Preparation

Strip the strings and dice, or slice on the diagonal.
