Chinese celery

The thin, intensely fragrant celery, not the fat Western stalk: stir-fried with squid or cured meats, and the celery specks on top of claypot rice. In Australia it is an Asian-grocer and market vegetable only; the inner stalks and leaves of ordinary celery, cut fine, stand in, and the leaves carry the flavour.
Preparation
Cut into lengths, leaves and all.

Southern China. Asian grocers and markets year round, best autumn to spring; not in supermarkets.
