Coconut milk

The milky liquid pressed from coconut flesh, sold in tins. Half a tin makes Hong Kong curry chicken smooth, and it is the base of coconut sago in sweet soups. Supermarkets stock it (Ayam, for example); Thai brands at Asian grocers.

Preparation
Shake the tin before opening.
