Hong Kong curry chicken is made from curry paste (spices, garlic and shallot fried down in oil) or from a tin of curry powder with coconut milk. Hong Kong curry paste is not imported for Australian retail; a Malaysian paste (Tean's, for example) or a curry powder stands in.
