E-fu noodles
伊麵
Egg noodle cakes fried and then dried, round and flat, two to a pack, with a soft, spongy bite: the noodle of 乾燒伊麵 and of the birthday longevity noodle. In Australia only the dry-noodle shelf of an Asian grocer has them, never a supermarket; thin egg noodles are a different thing and fry up without the sponge. Boil one to two minutes until they loosen, lift them out, and do not overcook.
