Evaporated milk

Tinned evaporated milk: milk with half its water boiled off and no sugar added, thick and pale. Two tablespoons at the end of Hong Kong curry chicken give the cha chaan teng's pale, sweet finish, and it is the milk of Hong Kong milk tea and of corn with diced pork. Carnation is the tin in Hong Kong and in the Australian supermarket baking aisle.

Preparation

Shake the tin before opening; once it is in the curry, do not let it boil hard.
