Fish paste
The mud-carp paste of a Hong Kong wet market is not sold in Australia; the stand-in is Australian-made Hong Kong style fish paste (Hakka 400 g), in the freezer of most Asian grocers. Beat it hard in one direction for ten minutes with spring onion, white pepper and a little starch slurry until it turns springy: the bounce is the beating, not the fish.

- Fish is a mandatory-declaration allergen in Australia; steam until the flesh lifts from the bone and the bone is white, not pink.
Preparation
Thaw; beat in one direction until it turns elastic.
Origin
Australian-made (Hakka). Most Asian grocer freezers (Hakka, 400g, for example); to make your own use whiting or flathead fillets, never basa.
