Glutinous rice flour

糯米粉

Flour milled from glutinous (sticky) rice; with warm water it makes the soft, chewy dough of tangyuan, 糯米糍 and 煎堆. It is not rice flour, which is ordinary rice and gives a crumbly dough that will not wrap. The Thai Erawan green bag, for example, is in the Coles and Woolworths Asian aisle (the Woolworths tag says Rice Gluten) and at every Asian grocer. Frozen filled tangyuan from the grocer freezer are the shortcut.

Cautions: read first

  • Glutinous rice cakes and balls are sticky and a choking risk for small children and the elderly; cut them small.

Preparation

Add warm water a little at a time to an earlobe-soft dough; cooking a small piece and kneading it back in stops the dough cracking.

Origin

泰國. In the Coles and Woolworths Asian aisle and at Asian grocers, the Erawan 500 g green bag for example. Do not substitute the health-aisle rice flour.
