Rice flour
粘米粉
Flour milled from ordinary rice; it steams firm and clean-cut, and it is the frame of 缽仔糕, 白糖糕, turnip cake, taro cake and 芝麻卷. It does not swap with glutinous rice flour. The Thai Erawan red bag at Asian grocers is the one Hong Kong families recognise; the rice flour in the supermarket health aisle is coarser, fine for a batter and wrong for a steamed cake.
Preparation
Mix to a slurry with cold or room-temperature water, sieve it, and stir again just before it meets the hot water.
Origin
Mostly made in Thailand. At Asian grocers and online, the Erawan 500 g red bag for example; supermarket rice flour in a pinch.
