Wheat starch
The starch left when the gluten is washed out of wheat flour; steamed, it turns translucent and springy, and it is the skin of har gow and fun guo. In this volume it is the two or three spoons beside rice flour in 缽仔糕, turnip cake and taro cake that make the cake stand up and go a little clear. Asian grocers only in Australia, as wheat starch or 澄麵粉, in 500 g bags.

Preparation
Mix into the slurry with the rice flour; for a wrapper it must be scalded with boiling water.
Origin
Mostly imported. The flour shelf of any Asian grocer; not a supermarket line. Cornflour stands in with less translucency.
