White sugar ground to a powder. It goes into the shortcrust shell of a butter-pastry egg tart, rubbed in with cold butter and flour, so the pastry is fine-grained with no sugar crystals. The Australian baking aisle carries two: icing sugar mixture, which has a little cornflour in it, and pure icing sugar; either works for the tart shell.
