Ketchup: sweet, sharp and thick. A spoon goes into tomato and egg, and it makes the sauce for sweet and sour pork and pan-fried prawns in shell; Hong Kong homes mostly use Heinz. Australian tomato sauce is sweeter and thinner, so buy the one labelled ketchup.
