What Hong Kong calls 沙律醬 is mayonnaise: egg yolk, oil and vinegar beaten to a thick white sauce, in the café's club sandwich, egg sandwich, crab-stick salad and potato salad, and a spoon of it makes scrambled eggs softer for some cooks. Japanese Kewpie is sharper and richer and is the taste of Hong Kong egg salad, and Australian supermarkets carry it; the whole-egg kind tastes closest to Hong Kong's.
