Sliced ham

The café ham is a pink, square-sliced pressed ham: cut into strips for ham macaroni, laid in a ham-and-egg sandwich, one layer of a club sandwich. It is not the Jinhua ham of the soup volume (see the 上湯 record). Every Australian supermarket deli counter and packaged chiller has it as leg ham or sandwich ham; ask for thick slices if it is going into macaroni. Ham off the bone and champagne ham are drier and dearer and still fine; honey-glazed is wrong.

- Pork; a processed meat, high in sodium; some brands contain soy, wheat or milk, mandatory-declaration allergens in Australia, so read the label; refrigerate once opened and use within three to five days.
Preparation
Cut into strips or dice for macaroni; straight into a sandwich.
