The café uses two cheeses: processed slices in sandwiches (cheese, ham and egg; the club sandwich) and a mild melting shred on top of baked pork chop rice and baked Portuguese chicken rice. Read the Australian pack: tasty is not a description but mature cheddar, mild is young cheddar, and both are sharper than the café's. For the bake buy shredded pizza cheese, 3 cheese blend (mozzarella and cheddar) or shredded mozzarella, which browns and pulls; for the sandwich buy burger cheese or processed cheese slices (Kraft Singles, for example).
