Pineapple bun
The soft Hong Kong bakery bun with a sugar, butter and flour topping that cracks in the oven into a diamond pattern like a pineapple's skin, hence the name; there is no pineapple in it. The café's 菠蘿油 is this bun, hot, split and filled with a cold slab of butter. This record is the bought bun; baking it is a weekend project on another page of the dessert volume.
