Sichuan's salted, chilli-rubbed mustard tuber: salty, hot, crunchy. It flavours steamed pork slices and the pork and zha cai noodle soup. Asian grocers sell 80 g sachets of pre-shredded (Wujiang), seasoned sweet-hot, and whole heads in jars or vacuum packs that need rinsing and slicing; for steamed pork buy the whole head.
